Unlike a pizza oven built into a van, ours is out in the open, so we have plenty of space to set up a proper travelling kitchen. The oven reaches temperatures of more than 450 degrees centigrade and is big enough to cook 10 pizzas at a time. With a team of trained staff and a finely tuned production process, that translates to a rapid 100-plus pizzas an hour.
