Led by head chef Alan Adlem, Posh Nosh have a glowing reputation for their high-quality dishes brimming with Devon's finest produce, working closely with local suppliers to incorporate the best of the West Country's fabulous ingredients. 'We strive to produce excellence in both food and service and are always working at modernising our food by keeping an eye on the latest trends and ingredient combinations ' hence our latest menu revamp, which focuses on canapés,' explains events coordinator Sophie.
With canapés, there's no need to stick to one type of cuisine, and it's easy to add vegetarian or vegan canapés without changing the whole menu to suit. Posh Nosh's chargrilled courgette cup with herby goat's cheese and tomato jam is summery, fresh and full of flavour ' and happens to be gluten-free. 'This canapé is gluten-free but by no means sub-standard, as can be the stereotype with special dietary food,' says Sophie. 'The goat's cheese can be substituted for spinach pesto or walnuts to make it dairy-free or vegan.'
Another selling point of canapés is the creative ways in which they can be presented. From the rustic favourite of chopping boards, wooden logs or baking paper to an industrial-chic choice of slate or porcelain, the serving ware can be easily matched to your theme, colours or styling. The catering company's Thai pork belly with sweet chilli sauce is one of the many canapés they display and serve on crockery, while they can also 'add elements such as edible flowers for rustic, country weddings or dustings of powdered herbs and spices for those who are opting for a more contemporary feel for their day,' says Sophie.
And if you're keen to match your menu to your wedding theme, you're not restricted at all. Saffron chicken on mini poppadum with raita is a bright and colourful canapé, great for an Asian-themed wedding. 'This canapé is served cold so works well in the summer and is substantial enough to keep hunger pangs at bay before the wedding breakfast is served,' says Sophie. 'We are open to working with our clients to create bespoke themed or cultural menus if they'd like us to.' For Italian-themed celebrations, the pea and mint arancini with pea purée often proves a popular hit. 'These Italian favourites are served warm and are an explosion of veggie-friendly flavour,' explains Sophie. 'They work well in both the winter, as they're warm, and summer, as the pea purée adds a splash of vibrant colour.' And for a coastal or seaside-themed wedding, you're not restricted to fish and chips, but can use the English classic as inspiration for a more refined option. 'Our monkfish scampi with lemon mayo is a traditional dish made into a funky canapé that will take you back to eating fish and chips by the sea. This deep-fried fishy goodness packs crunch, lots of meaty white fish and a zesty, creamy, lemon accompaniment.'
And what's the final card in the canapés pack? 'They are really easy for guests to pop in their mouth whilst standing during a drinks reception!' says Sophie.
